VARIETY RICE

In states of Tamil Nadu, Andhra Pradesh and Karnataka, the festival of Navrathri is called Kolu or Navratri Golu. the house and decorating it with dolls which are collected over the years.golu the concept of arranging these Navrathri dolls on the plank is to depict that Goddess Mahishasuramardini is sitting in her Kolu, prior to the slaying of the demon Mahishasura. the Navarathri Golu is set up with an odd number of steps (usually 7, 9, or 11), and the placement of different idols of Gods on them. Generally, when people come to a person’s house to see the Golu, they are given prasad, kumkum (red powder), and a small bag of gifts usually containing a mirror, a comb, a small box of kumkum, and fruits. These are only given to girls and married women. On a ninth day, books and musical instruments are offered along with the Golu. Ayuda pooja- worship and thanksgiving to tools and implements and vehicles are performed. All kinds of vehicles-such as busses, cars, and trucks and tools such as water pumps, chisels, hammers, ploughs are thanked. The tenth day is the day of victory—an auspicious day to start new ventures and journeys, and a day to start learning new skills.

 

How to make curd rice

 

First, the rice is cooked with more water than you normally would. Because the rice is cooked with extra water.

Slightly mash the rice using your hands.

Heat oil in a pan.

Once the oil is hot, add mustard seeds and curry leaves and let them crackle for a few seconds.

Add urad dal, ginger and dry red chillies and fry until dal turns slightly brown.

Pour the tempering over curd rice and mix well.

Garnish with fresh coriander and pomegranate seeds Serve chilled.

Ingredients For curd rice

  • 1/2 cup Short Grain Rice
  • 1/2 cup Curd
  • 1/4 cup Milk
  • 2 tbsp Carrot Grated
  • Salt to taste
  • 2 tbsp Vegetable Oil
  • 1/2 tsp Mustard Seeds
  • 10-12 Curry Leaves
  • 1 tsp Urad Dal
  • 1/2 tsp Ginger Grated
  • 1 Dry Red Chilli Broken
  • 1 tbsp Fresh Coriander Chopped
  • 2 tbsp Pomegranate Seeds

How to Make Pudhina Rice

Wash mint leaves very well. Take mint leaves, green chillies, ginger and garlic to the blender. And grind it into a smooth paste adding very little water. Heat the oil in the pan on medium heat. Once hot add cashews and fry it till it gets golden brown. Drain and remove it to a plate.

Add little water if required.

Keep the paste aside. Heat vegetable oil in a pan. Add onion and fry for 2-3 minutes. Now add the pudina masala and cook for a minute.

Add rice along with 2 cups of water and salt to taste and mix gently.

Cover the pan and cook the rice on low heat until all the water is absorbed and rice is cooked. Serve hot with raita.

Ingredients for pudhina rice

  • 1 cup basmati rice washed well under running water
  • 2 cups of water
  • salt to taste
  • 1 cup basmati rice washed well under running water

  • 2 tbsp oil
  • 1/2 tsp cumin seeds/jeera
  • 2 dried red chillies
  • 1 medium size onion finely sliced
  • blended pudina paste
  • 1/4 tsp salt if required
  • 1 cup cooked basmati rice

How to Make Lemon Rice

Heat the 2 Tbsp oil in a large non-stick frying pan.

Add mustard seeds, split Bengal gram, white lentils and stir-fry until lightly browned.

Add peanuts and cashew nuts to it, and sauté till they turn golden brown.

Now add the dried red chillies, curry leaves, chopped green chillies and stir-fry for 1 minute.

Add cooked rice, asafetida, turmeric powder, lemon juice, and salt.

Mix well. Stir fry until heat through. Try not to break up the grains too much.

To serve, place the rice onto serving plates.

Turn off the heat and Cover the rice for about 5 minutes. Lemon Rice is ready.

Serve delicious lemon rice with raita, chutney, pickle, and Papad.

INGREDIENTS for lemon rice

  • Cooked Basmati Rice – 2 Cups
  • Oil – 2 Tbsp
  • Mustard Seeds – 1 Tsp
  • Split Bengal Gram (Chana Dal) – 1 Tsp
  • White Lentils (Urad Dal) – 1 Tsp
  • Ginger, finely chopped – 1 Tsp (If you are using)
  • Curry Leaves – 1 Tbsp
  • Green Chilies, Chopped – 2
  • Dried Red Chilies – 4-5 small
  • Cashew Nuts – 1 Tbsp
  • Peanuts – 4 Tbsp
  • Turmeric Powder – 1 Tsp
  • Fresh Lemon Juice – 4 Tbsp
  • Salt To Taste
  • Pinch Of Asafetida (Hing)

How to Make Coconut Rice

Soak the urad and chana dal for 15 minutes. Drain and set aside.

Heat oil in a wok/pan on medium heat. Once the oil is hot, add mustard seeds let it crackle.

Add ginger and green chilli and cook till ginger starts changing it’s colour to a golden brown. You may also add a pinch of Hing (asafetida) at this point.

Then add the cashews, urad dal, chana dal and cook till they turn golden brown.

Also, add the curry leaves and mix.

Add the freshly grated coconut and mix. Cook the coconut for a minute or two.

Finally, add the cooked rice, also add the salt and mix everything together and remove the pan from heat.

Serve the coconut rice with any curry, yoghurt or pickle.

2 cups pre-cooked rice

1 1/2 tablespoon vegetable oil

1 teaspoon mustard seeds

1/2 teaspoon cumin seeds

A pinch of asafoetida

1/4 teaspoon ginger(grated)

2 1/2 tablespoon channa dal

2 tablespoon urad dal12 no cashews,1 no dried red chilli

2 no green chillies,1 sprig curry leaves,1 cup fresh grated coconut
